The BEST Crispy Garlic Butter Potatoes
20 mins prepServes 4
Golden, buttery, and insanely crispy on the outside, with soft, fluffy centers. These potatoes are boiled, steam-dried in the same pot, and roasted to perfection. The magic is in the method!
1. Boil: Preheat oven to 425°F and line a large baking tray with parchment paper. Cut potatoes into 2-inch chunks. Add to a large pot of generously salted cold water, bring to a boil, and cook for 12 minutes, until fork-tender but not falling apart.
2. Steam-dry (easier than it sounds): drain well, then return potatoes to the hot, empty pot over low heat for ~2 minutes, gently shaking to release excess moisture. Turn off heat and shake the pot a few more times to lightly rough up the edges (this is the secret to extra crispiness!).
3. Season: Toss potatoes with olive oil, salt, and pepper. Spread onto a large metal baking sheet in a single layer, leaving space between each piece. Don’t stack them.
4. Roast: Bake for 30 minutes. Flip and roast for another ~15–20 minutes, until golden brown and crispy on both sides.
5. Finish: Mix melted butter with garlic and rosemary. Drizzle over the potatoes, toss gently, and return to the oven for 3–5 minutes, until fragrant. Finish with flaky sea salt and serve immediately! You may also do the butter and garlic step in a skillet.
