2-ingredient, ultra crispy Tapioca Tater Tots!🥔🔥
20 mins prepServes 4
Featuring the easiest, 2-ingredient dough using just tapioca or yuca (also known as cassava) and cornstarch! That’s it! To go the extra mile- you can fill them with cheese like mozzarella or feta.
Bring a medium pot of water to a boil, add the yuca, salt generously and cook for ~20-25 mins or until it can easily be pierced with a fork. Once tender, remove and drain. After draining, use a potato masher to turn into purée or dough. Bring mashed yuca to a bowl and add cornstarch. IF adding cheese, add it along with the cornstarch. Knead the dough with clean hands and feel free to season to taste with more salt. Flatten and spread dough into a rectangle shape over a cutting board, place a wet towel underneath so it doesn’t slide when slicing it later. Use a kitchen knife to cut into 10-14 squares. In a nonstick skillet, warm up the oil and add the tater tots and cook for ~3 mins per side, until crispy and a light, golden brown. Enjoy warm with your favorite salsa!
