15 mins prepServes 3
This recipe provides instructions for making crispy, flavorful chili chickpea croutons and a zesty lemony tahini dressing, designed to enhance salads and other dishes, as suggested for a hearty green salad with pear, avocado, and jammy eggs.
**For the Chili Chickpea Croutons:** Preheat oven to 400F and line a baking tray with parchment paper. Rinse the can of chickpeas and pat them dry with a towel. In a bowl, toss the dried chickpeas with 1/4 tsp sea salt, 1/4 tsp black pepper, a dash of chili powder, a dash of Tajin, the juice of 1 small lemon, a dash of sumac, a dash of smoked paprika, and 1 Tbsp of extra virgin olive oil. Spread the seasoned chickpeas out evenly on the prepared baking tray and roast for approximately 20 minutes. Make sure to toss them around to change sides, sprinkle more condiments (if needed), and roast for another 8-10 minutes until crisp.
**For the Lemony Tahini Dressing:** Whisk together 1/2 cup tahini sauce, 2 minced garlic cloves, 3 Tbsp freshly squeezed lemon juice, 1/4 tsp – 1/2 tsp of sea salt (adjust to your palate), and 1/4 cup of warm water. Continue whisking until the dressing is emulsified and smooth. Store any leftover dressing in the fridge and shake before drizzling.
