Creamy Hummus and Tomato Sourdough Toasts
10 mins prepServes 6
A recipe for making creamy, homemade hummus, which is then used to create bright and cheery sourdough toasts topped with fresh heirloom tomatoes, basil, sumac, and a final drizzle of olive oil.
For the Hummus:
1. You'll need a high-speed blender or food processor. First, add the tahini paste and the juice of the large lemon and process for approximately 1 minute. It will turn lighter and thicker.
2. Then, add the garlic cloves (always use fresh), the 2 Tbsp of olive oil, sea salt, and 1 cup of the rinsed chickpeas. Blitz for 30 seconds.
3. Incorporate the second cup of chickpeas and blend until completely smooth.
4. Tip: For an even creamier hummus, slowly add 1 tablespoon of icy water or ice cubes. This last step is completely optional.
For Serving the Toasts:
1. Toast crusty sourdough bread twice.
2. Brush the toasted sourdough with extra virgin olive oil.
3. Spread the freshly made hummus generously onto the toasts.
4. Top with sliced heirloom tomatoes, a sprinkle of sumac, and flaky sea salt.
5. Finish with one final drizzle of olive oil.
