Creamy Lemon Zucchini Angel Hair

Slice zucchini into rounds over a cutting board, place over a clean kitchen towel and wrap it. Next, squeeze the ends of the towel together to release excess liquid. Warm up olive oil in a medium saucepan and add garlic, zucchini, lemon juice and lemon zest. Stir until fragrant (30 seconds to 1 minute), watching carefully as garlic burns or browns easily. Season with sea salt, sumac, red pepper flakes and add the rinsed Palmini angel hair or pasta of choice. Add grated parmesan cheese, stir for 1 minute or until melted and garnish with fresh mint or basil once plated. Set aside some lemon zest and Parmesan to garnish, too! Enjoy every bite!
