Crispy Cauliflower Wings with Buffalo Sauce and Homemade Lemon Poppyseed Ranch Dip
20 mins prepServes 4
Perfect for game night or date night, these ultra-crispy cauliflower wings are tossed in a fiery buffalo barbecue sauce and served with a homemade lemon poppyseed ranch dip that also doubles as a salad dressing.
Preheat oven to 425C and line a baking tray with parchment paper. Wash and cut cauliflower stem. Break down into florets ~1-2 inches wide. Coat cauliflower florets in the whisked eggs first. In a separate bowl, combine both types of bread crumbs, garlic powder, and paprika. Next, coat cauliflower in the bread crumb mixture and set on the baking pan. Bake for ~20-25 minutes, turning at the halfway mark. While they bake, mix Buffalo and barbecue sauce together. You can also add a few drops of Tabasco, or 1 Tbsp of honey to mellow out the sauce further if desired. Once baked, bring the cauliflower out of the oven and use a spoon to coat each floret with the sauce on both sides. Place back in the oven and bake for ~8 additional minutes to take them to the next level. For the Homemade Lemon Poppyseed Ranch, combine the honey, white vinegar or apple cider vinegar, extra virgin olive oil, lemon juice, full-fat mayo or avocado mayo, poppy seeds, full fat greek yogurt, dried dill, and garlic powder in a bowl and mix well until combined. Enjoy every bite!
