Gnocchi Alfredo + Garlicky Spinach Bowl
20 mins prepServes 3
Warm up to this gluten-free and dairy-free Gnocchi Alfredo + Garlicky Spinach bowl! This recipe features homemade Cashew Alfredo sauce, sautéed garlicky spinach (or other greens like arugula or kale), and store-bought potato and rice flour gnocchi.
Cook the pasta of your choice (gnocchi recommended) according to package instructions. In your food processor, combine all the cashew alfredo sauce ingredients (soaked cashews, sea salt, black pepper, 3 minced garlic cloves, nutritional yeast, water/bone broth) and process until smooth and creamy. If the sauce is too thick, add a pinch more water or broth and blend again to adjust consistency. In a skillet or medium to large saucepan, warm up 1-2 Tbsp of olive oil. Add 4 cloves of finely minced garlic and cook until fragrant (1-2 minutes). Add about 4 cups of tightly packed spinach and stir until it starts to soften. Add the cooked gnocchi and cashew sauce to the pan with the spinach and give it a good toss to combine. Top with coarse pepper, red pepper flakes, or fresh grated parmesan before serving.
