Greek Pasta Salad with Vinaigrette
20 mins prepServes 4
A fresh and healthy Greek pasta salad featuring tricolor rotini, feta, cherry tomatoes, zucchini ribbons, and red bell pepper slices, all tossed in an easy homemade Greek vinaigrette. Perfect for a quick summer meal.
First, prepare the Greek Vinaigrette: Place the virgin olive oil, white wine vinegar, fresh lemon juice, dried oregano, garlic salt, minced organic garlic, dried parsley, ground pepper, and 1-2 teaspoons of raw honey or agave into a jar and shake well, OR pour into a bowl and whisk until smooth. If you add the 3 tablespoons of feta separately or right before serving, the Greek dressing can stay in your fridge for up to 7 days; just shake it every time before serving.
Next, prepare the pasta salad: In a large bowl, combine the cooked and cooled pasta, finely diced red onion, halved cherry tomatoes, zucchini ribbons, sliced bell peppers, and a handful of crumbled goat feta. Pour the prepared Greek Vinaigrette over the pasta salad ingredients and toss gently to combine. Serve immediately or chill before serving.
