Place water and broth in a large stock pot and bring to a boil. Add: carrots, leeks, onions, garlic, and celery. Add sea salt and stir. Lower the heat and let everything simmer for ~45 mins. Use a slotted spoon to remove veggies and garlic from the pot and add them to a blender along with 1/2 cup of pot liquid and tomato paste. Blitz until smooth and re-add puréed veggies to the stock pot and mix to combine. The broth will be bright in color and the flavors unreal!😌☝🏻Cook Stellete pasta or Acini di Pepe following package instructions, drain and add to bowls. I like to add a splash of olive oil to keep them from sticking together. Pour broth over each bowl, top with Parmesan and good quality olive oil! Enjoy every spoonful!
