Marinated Baked Feta and Olives

There’s few things I love more than cheese, olives and crusty bread. This creamy + melty MARINATED BAKED FETA AND OLIVES features a side of crispy crostini to scoop it up! Grab the easy recipe deets for BOTH the baked and non-baked versions below!
Mix brine (olive oil, feta, parsley, oregano/thyme, preserved lemons/juice, chile/red pepper flakes, salt/pepper) together in a bowl until well combined. You may chop up the feta and add it as cubes, or simply let the block sit in the brine. Cover and refrigerate for ~24 hours or overnight. If you’re not going to bake it - bring out of the fridge ~25 mins before serving so the olive oil returns to its liquid form (and mix the brine with a spoon).
IF baking, preheat oven to 400F and leave some brine behind in a separate bowl to coat it when it comes out. Place the feta in a baking dish and add your olives or tomatoes. Bake for ~30-35 mins. Top with fresh olives and extra brine before serving. Serve with a side of crostini, fresh pita or crusty sourdough for dipping. Enjoy!
