perfectly fluffy Tres Leches Cake!
20 mins prepServes 8
A perfectly fluffy Tres Leches Cake recipe that is gluten-free and includes plant-based milk options. This cake has no added oil(s) and is made with almond flour, ensuring deliciousness even with plant milk substitutions.
1. Preheat oven to 350°F. Using a paper towel, grease a 9-inch nonstick pan with butter.
2. In a large bowl, whisk the eggs. Next, whisk in honey, vanilla, almond flour, baking soda and sea salt. Don’t over-mix the batter or it won’t rise and hold together once the cake cools. Transfer batter into the prepared pan.
3. Bake until edges are golden and set— and a toothpick inserted in the center comes out (mostly) clean ~25 mins. Cool the cake in the pan on a cooling rack for 15 mins.
4. Combine the 3 types of milk (evaporated milk, sweetened condensed milk, whole milk) into a separate bowl and whisk well to form a homogeneous mixture. Poke holes using a fork or wooden stick into the cooled down cake and then slowly pour milk mixture. Cover with foil and refrigerate overnight.
5. Before serving, prepare the whipped cream topping: whip 1 pint heavy whipping cream (or coconut sub) with 2 Tbsp powdered sugar, 1 tsp vanilla extract, and a pinch of cinnamon until stiff peaks form. Add to the cake and garnish with 1 cup sliced strawberries.
