Shrimp Sushi Bake with Sriracha Mayo & Sesame Seeds!
15 mins prepServes 2
Loving this quick lunch idea or fresh and light dinner. Minimal ingredients like nori wraps, your favorite rice, and shrimp that’s coated in Japanese mayo, sriracha, and good-quality soy sauce or tamari.
Preheat oven to 350F and get 2, 6-muffin tins ready. Pat dry shrimp and rough chop, then set aside. Season shrimp with a sprinkle of sea salt and ground pepper and coat them in the sriracha mayo mixture (combine sriracha, Japanese mayo, and soy/tamari sauce). Place cold, but cooked rice over each Nori sheet, then pat down with clean hands or the back of a spoon. Place marinated shrimp over the rice and then over each individual muffin spot as if they were muffin holders. Bake for ~5 minutes and enjoy! You can garnish with finely-chopped chives or sesame seeds and a squeeze of fresh lemon juice before serving.
