Sweet Corn, Tomato & Avocado Salad with Cilantro Lime Dressing
20 mins prepServes 5
This sweet Corn, Tomato & Avocado Salad comes with a zesty Cilantro Lime Dressing that you'll want to drizzle on everything. It's a perfect seasonal salad, versatile enough to be a meal or a side, and easily adaptable to dietary preferences.
For the salad: Halve the cherry tomatoes. Boil the ears of corn and slice the kernels off the cob. Cube the avocados. Slice the jalapeño (remove seeds for less spice) if using.
For the Cilantro Lime Dressing: In a blender or food processor, place the cilantro, coriander, lime juice, agave syrup, garlic, and sea salt and pulse together. Slowly pour in the olive oil and process until smooth. If using a food processor, add the olive oil at the end while it’s still running. If you want to make it creamy, add the Greek yogurt along with the olive oil; it goes from vinaigrette to creamy dressing. If vegan, sub plain coconut yogurt.
Combine the prepared salad ingredients in a bowl. Pour the dressing over the salad and mix well. The cilantro lime dressing is amazing on any salad. You can easily turn this salad into a taco or burrito bowl by simply adding garlicky ground beef, grilled chicken, shrimp, or tempeh. You can also add crumbled nacho chips or tortilla strips on top.
