Tart & Sweet Citrus Berry Loaf
20 mins prepServes 10
This delicious and easy-to-make loaf features all-purpose flour (with a gluten-free substitute option) and a variety of berries like cranberries, raspberries, or cherries. It's topped with a bright orange glaze.
1. Preheat oven to 350F. Grease an 8 1/2 in by 4.5 in baking pan. Dust the bottom with flour, then tap into kitchen sink to remove/ throw any excess. OR- use parchment paper for easy removal.
2. Whisk dry ingredients together in 1 large bowl: flour, baking powder, sea salt.
3. Cream together sugar and coconut oil or butter. You don’t need a stand mixer— simply combine into a smooth, slightly granulated paste. Whisk eggs and add to this bowl along with vanilla and mix until well combined.
4. In a measuring cup, combine almond milk, orange zest and orange juice and set aside.
5. Add dry ingredient mix to bowl with sugar and butter paste. Next, add the measuring cup with milk, orange zest and orange juice. Don’t overmix. Fold in berries of choice and pour into prepared loaf pan.
⭐️ Pro tip: lightly dust your berries in flour before folding them into the batter. This prevents them from sinking to the bottom of the pan.
6. Bake for ~50 mins or until a knife inserted into the center comes out mostly clean. Cool on a wire rack before glazing. Enjoy every slice!!
