Another Saturday, another warming bowl of TOMATO + KALE MARINARA PASTA! π ππΏ creamy, yet light and a chunky + slightly sweet homemade marinara sauce packed with an overload of blistery tomatoes! grab the easy deets below, my favorite holiday pasta recipe from last year! ππΌππΌ#vegetarianfood #pastalove . Ingredients ΒΌ cup of extra virgin olive oil 1 large onion finely diced into squares 2 small shallots finely diced 2-3 cups of sweet cherry tomatoes! 2 tablespoons of organic tomato paste 2-3 cloves of garlic, finely minced 1 tablespoon of agave syrup or honeyπ― handful of fresh chopped oregano or basil Sea salt and black pepper to taste π§ππΌ . Instructions πππππ In a medium pot, warm up the olive oil and add the shallots, onions and garlic, while stirring often. Tip: garlic burns easily. You could also add it towards the end, when the shallots + onions are starting to soften. In a medium bowl, add your tomatoes and use a potato masher or wooden spoon to break them up and extract all those good juices. Add them to the pot you have on the stove with the onion, garlic and shallots & stir. Add the agave or honey, sea salt, pepper, and oregano. Add the tomato paste and stir well. Reduce heat to a simmer, cover the pot, and let it sit on the stove for about ~40 mins, stirring often. If youβre not dairy-free, you could add some fresh, grated parmesan or pecorino cheese for flavor. Pour over the cooked pasta of your choice! . I love to finish this off with a cup full of greens and add it towards the end. Try it with garlicky spinach, kale, peppery arugula or a hint of sweet basil! πππ»ππ» . Hope you're having a great evening, friends!ππ»β¨xx
